Lets Bake Candied Fruit Apple Pie

Usually, they don’t celebrate Valentine’s Day in Georgia, but they do in Canada. My son, who is a preschooler in Calgary asked me to make Valentine’s day gifts because his daycare center was going to celebrate it. So, together we decided to bake a red, heart-shaped cookies for everyone. What I especially like here, in Canada, is that you can buy every single detail that you can imagine.

You don’t need to think a lot, just need to go in Art Supplies, Crafts & Framing store and feel free to grab whatever you need. You don’t even need to have a special talent and artist’s mind with this store. So, we’ve visited one, bought some lovely Valentine things to decorate cookies and then baked a lot of cookies. We wrapped each cookie into the lovely packets, put them into the basket and the next day he made a surprise for friends and teachers. I’ve enjoyed the whole process.

After Valentine’s Day, a time has come for my blog and a very delicious Apple Pie with orange and lemon candied peels. It really needs time, but believe me, you’ll not waste it in vain. I could hardly take a photo of a pie; it was eaten immediately.

I’ve tried to take a video of the baking process for the first time. It was very interesting. The whole family helped me to take a video and we had fun.

Now I’ll share a recipe with you.

INGREDIENTS FOR CANDIED FRUIT PEELS:

1 lemon, 1 orange, 50g sugar, 1tbsp vodka, 100ml sugar syrup

INGREDIENTS FOR PASTRY:

250g room temperature butter, 100g sugar, 1g vanilla, pinch of salt, 3 egg yolks, 100g sour cream, 400gr flour, 20g baking powder

INGREDIENTS FOR FILLING:

1kg apple, 3 tbsp sugar, 50g butter, 2g vanilla, 1 lemon zest, 1 lemon juice, 30g sugar powder

First, better to make the pastry, because it needs to be refrigerated at least 30 minutes.

Slice the butter into cubes or grate using the grater, Beat the butter with a hand-held or stand mixer on a low speed, add the sugar to the butter and beat until it becomes soft and creamy. As the sugar is beaten add vanilla, a pinch of salt and egg yolks only gradually. Then, you must add sour cream, mix baking powder to flour and add to the batter.

Form the dough into a ball, cover with plastic wrap and refrigerate at least 30 minutes.

While dough is in the fridge, it’s time to make candied fruit peels. Wash an orange and lemon peels, Place the peels in a large saucepan, and cover with cold water. Bring to a boil, then drain, cool and cut them into small pieces. Bring sugar and water to a boil, stirring occasionally until sugar dissolves, add vodka, sugar syrup and then add sliced peels, reduce heat to medium-low, and simmer gently until syrup is thickened. let peels cool.

While dough is in the fridge and the candied peels are cooling down, now it’s time to make an apple puree.

Wash, peel and core your apples, then slice into small cubes, bring all puree ingredients (sugar, butter, vanilla, lemon zest, lemon juice, sugar powder) into the bowl and boil it on the low temperature for 15 minutes or until they are soft enough.

Add candied fruit peels into the apple puree and cool it down. let’s start to bake.

Preheat oven to 390 degrees F/200 Celsius

Cut off a 1/4 of the pastry and keep it wrapped while you roll out the rest, and use this to line a pie.

Roll the remaining third to a circle on a lightly floured surface, put a baking paper in the pan, place the bottom crust in your pan (I used the springform cake pan 26 diameters) and fill with apple puree, roll remaining pastry out to make a lattice top pie crust, use a pastry wheel or pizza cutter, carefully thread the strips over and under one another or as you wish. Brush the top with an egg wash which I forgot to do 🙂 and my lattice top doesn’t look good but you can try better 🙂

Bake the pie at 390F degrees for 40 minutes. Cool it down and sprinkle on it a sugar powder.

Voila 🙂

 

A mix of Candied fruit peels and apple puree have been perfect.

Do not be lazy, bake it during a rainy or snowy day and if extra calories aren’t a problem for you, then ENJOY!
