Finally got Canadian visa and we’ve moved to Canada where had an unforgettable New Year.

Well, now I keep on bake and write here, in a new country. And if anyone reads my blog, I’m happy to be a blogger again. I’ll try to write in English, I know it is not perfect but pretty sure that my posts will be understandable.I’ve donated a most of my stuff in Georgia and almost nothing is left (I meant clothes and etc.) and along with Hercules (this is my kid’s nickname :)), I’ve taken my baking book with me to Canada.

So, I’m going to try every single recipe from this book and share the results, baking experience and every single detail with you. For the very first time for Canada, I choose Brownie with orange and apricot jam. Actually, I don’t love a combination of chocolate and fruits but I love Brownie and I was curious how they play together.

INGREDIENTS FOR BATTER

6 medium eggs;   150g butter;   50g sugar powder;   2g vanilla;   a little bit of salt;   3 tbsp. honey;   150g dark chocolate;   200g sugar;   80g flour;  40g cocoa.

INGREDIENTS FOR FILLING AND GLAZE

30ml amaretto;   300g apricot jam;   1/2 lemon zest and 1/2 orange zest; 1/2 lemon juice;   150g dark chocolate;   100g butter;   150g heavy cream

 

DIRECTIONS:

  1. Separate egg white and yolk. Be careful not to break the yolk.
  2. Beat butter with sugar powder until it becomes fluffy, add vanilla, salt and add egg yolks slowly one by one. Add honey.
  3. At the same time melt the chocolate on steam, cool it. Beat egg white and add sugar slowly. Beat them until the mixture becomes a fluffy cloud and stands up in stiff peaks when the blades are lifted.
  4. Now add melted chocolate mass into the beaten egg yolks and then all this mixture add to the beaten egg white mass. Finally, add flour and cocoa. Voila, the batter is ready!
  5. Put a baking paper in the spring form cake pan (26 diameters)
  6. Bake in the preheated oven (160 degrees C) for an hour.
  7. Invert pan until cool, then carefully take off the baking paper and cool completely.
  8. After that, you need to divide it into 2 pieces.

9. On cut side of the bottom layer, spread filling (mix together an apricot and orange jam with zests and lemon juice ); cover with a top layer and put it in the fridge for an hour. 

10. It’s time for chocolate glaze: In a double boiler with boiling water, combine chocolate, heavy cream and butter. Stir frequently with the rubber spatula until mixture slightly thickens. Put a cake on a wire and pour glaze over top of the cake. Use a spatula to smooth, but quickly, as the glaze will set up in a minute.

Voila, that’s it…

As I mentioned before, I don’t love the duet of chocolate and fruits. Maybe I’m old fashioned but this is just my opinion. The Cake was more delicious the next day, but next time I’ll do Brownie without jam 🙂 Wish you good luck with your choice and enjoy it.
